Homemade Granola

~The Recipe ~
" My friend Elizabeth's version of Homeade Granola"
Best Granola Around!!!!!

8 cups old fashioned oat

2-3 cups of water (2 for more crunchy granola, 3 for softer)

3 tbsp yogurt (preferably not low fat)

1 stick of unsalted butter

1/2 C coconut oil (or canola oil)

1/2 cup honey

1/2-3/4 cup real maple syrup

1 Cup wheat germ or milled flaxseed

1 C unsweetened coconut

1 C dark chocolate chips

1 C white chocolate chips

1 C dried cranberries (raisins, etc.)

Place oats, wheat germ, water and yogurt in a large mixing bowl.

In a small sauce pan, melt butter, honey, maple syrup, and coconut oil until heated through and combined (it's be hot enough to bubble around the edges and NO clumps)

Add butter mixture to oats.

Now mix all together until all oats are moistened nicely.

Then add coconut, dark and white chocolate chips and cranberries. Mix again.

Cover and let soak for 24 hours

Preheat oven to 250-300 degrees. Cover 2 jelly roll pans with parchment paper, and distribute mixture evenly on both pans.
Put in oven, even if not completely preheated. Bake for 40 minutes. Take out, stir, and switch racks in the oven, since both pans won't fit on the same rack.

Now bake for 1 hr- 1.5 hr longer, depending on how much water you used. Ideally you would bake at 200 degrees for 4 hours, but If you don't have that kind of time or energy to spend on baking something stop half way!

Turn off oven, let it cool completely.
Then remove from oven, and store in a large container.

Enjoy with yogurt, milk, or by itself with a banana for breakfast or a snack. A little goes a long way!

Thank you for sharing this recipe Elizabeth! It is so so so  yummy!!!!
